I typically only eat 1 meal a day and a snack, but for the sake of this video I will be showing you 2 meals and a snack.

• Palmini noodles from Amazon or sprouts, Walmart or whole foods

I got the keto cinnamon roll recipe from Amy Smith aka ucanketowithamy on Instagram
Ingredients
. 4 cups of Mozzarella Cheese (Shredded)
. 10 ounces of Cream Cheese ( Divided)
. 1/2 Cup of Coconut Flour
. 1/2 Teaspoons Xanthan Gum of baking powder
. 2 Large Eggs
. 2 Teaspoons Vanilla Extract
. 3 TBSP of Cinnamon
. 1/4 Cup Lakanto Monk Fruit Sweetener ( for the dough mixture)
. 3/4 Cup Lakanto Golden Monk Fruit Sweetener ( for the cinnamon mixture)
. 6 TSBP Melted Butter ( for the cinnamon mixture)
. 4 ounces Butter Softened ( for the icing)
. 1/2 Cup Lakanto Powdered Monk Fruit Sweetener (for the icing mixture)
. 1 teaspoon Lemon Juice ( for the icing mixture)
Instructions for the dough, cinnamon mixture and icing
1. In a large microwave safe mixing bowl combined 2 cups of shredded mozzarella cheese and 3 ounces of softened cream cheese.
2. Place mixture in microwave for 60, then remove and stir and return back in microwave for an additional 30-45 secs
3.Stir the mixture well together, and then add 1/2 Coconut Flour, 1 tsp of vanilla extract, and 1/2 tsp of the xanthan gum or baking powder, 1/4 cup monk fruit sweetener, and 2 eggs. Srie together or knead together until well combined.
4. Add remaining mozzarella cheese to the dough and place back in the microwave for an additional 60 secs, them stir again.
5. Wrap the dough on plastic wrap and place it in the refrigerator for 20 minutes to firm it up
6. Next in a small mixing bowl combined the golden monk fruit sweetener, cinnamon and melted butter together
7. Place the dough on a large sheet of parchment paper, and fold half of the parchment on top of the dough, so you can flatten it out with a rolling pin. Try to roll until it's a nice large square sheet
8. Add cinnamon mixture, to the flatten out dough and spread evenly
9. Roll the dough carefully, using the parchment paper to assist you with rolling
10. Cut the dough into 9 equal thickness pieces, and place into a square baking dish lined with parchment paper
11. Bake in the oven at 375* for 25-30 minutes or until golden brown. Cooking times may vary
12. To make the icing, combine the remaining cream cheese, soften butter, 1 tsp of lemon juice, 1 tsp of vanilla extract, and 1/2 cup of powdered monk fruit sweetener together and microwave it if need be for 30-60 secs. Then drizzle over cinnamon rolls and you can add other topping if you like. Enjoy
