Ingredients:
2 Tablespoons of Vegetable ghee
1/2 a medium onion - sliced
1/2 a green pepper
1/2 a red pepper
1 heaped teaspoon of garlic ginger mixed paste
1/2 teaspoon of salt
3 dried kashmiri chillies
3 sliced green chillies
1/2 a medium tomato - sliced
1 breast of chicken tikka - sliced
2 Tablespoons of BIR tomato puree (Watch how i make it here!:
400ml BIR base gravy (Watch how i make it here:
1 heaped teaspoon of naga chilli paste (mr naga brand)

*Spice mix
1 teaspoon curry powder
1/2 teaspoon turmeric
1/2 teaspoon of coriander powder
1/2 teaspoon of cumin
1/2 teaspoon of garam masala

Method:
1. To start with get your ghee into your pan and put the heat up to medium/high and let it melt. Then add your onions and peppers and fry for a few minutes until they soften and go golden.

2. Now you can add the ginger garlic paste and stir fry it with your vegetables for 30 seconds or so until it has started to cook. Now add your salt, this will help the vegetables lose their moisture and caramelize. give it a quick stir then...

3. Add your spice mix! stir the spices for 1 minute then add your tomato puree. Stir to combine and then add your fresh tomatoes and all your chillies!

4. Add a little bit of hot water to prevent the spices burning. let it simmer down slightly before adding 1 heaped teaspoon of your naga chilli paste!
Stir briefly before adding your chicken. 1-2 breasts for 1-2 people. give it a good mix and let it cook out briefly, then...

5. Add 400-500ml of your base gravy and cook out for at least 5-8 minutes on a medium heat. Cover if possible.

Once the curry has reduced to the desired consistency serve with rice and/or a naan bread! Enjoy!!!
